Hello lovelies!

I haven’t forgotten about you all 🙁 I have recently moved to another city and have been looking for a new job so all my time has been gobbled up! I promise to be back on track with videos and blogs really soon!

Until then, I thought I would treat you today with a Pineapple Salsa recipe! I made some Pineapple Salsa to go with some chicken skewers and Yam noodles (also known as shirataki noodles) and I must say it was yummy 🙂

It’s really quite easy and nutritious … so give it a try and tell me what you think 🙂

Pineapple Salsa*

2 cups pineapple – diced (fresh is best)
2 large tomatoes – cored and diced
1/2 cup spinach – chopped
1 tablespoon olive oil
2 cloves minced garlic
2 tablespoons cilantro – fresh chopped
*you may also add some chopped jalapeño if you want to add some kick 🙂

Combine all ingredients and let it sit at room temperature for an hour or so in order for it to marinate.

Here’s the finished salsa! I love how the colours dance on my grand-mother’s glass dish!
