Hello lovelies! Do you have a fridge full of veggies that you are tired of making soup with? If so, then you should try this easy recipe that is sure to please even your fussiest critics! The best part about this recipe is that you can alter it according to what you have on hand … PLUS … there’s no added salt or oil so you know it’s a healthy choice for your loved ones
Okra & Tomato Delight – OK… I know the title is corny but it’s not exactly a stew or a stir-fry so it was the best I could come up with
1lb Okra – washed and chopped into chunks with tips off
1lb Tomatoes – chopped
½ lb ground meat *optional if you wish to have a vegetarian meal
1 onion – finely chopped
1 can Chickpeas – drained and rinsed *may also be substituted with other legumes
1 cup Kale – chopped
1 teaspoon Garlic – minced
2 teaspoons Sugar
¼ cup Lemon juice
1 cup fresh Cilantro – chopped
1 tablespoon Turmeric
1 tablespoon Cinnamon
1 tablespoon Za’atar spice – available at Middle Eastern food shops or make it make it
1-*Fry ground meat until almost fully cooked. Remove from heat. Strain and rinse meat under hot water for a few seconds to remove any grease.
2-Heat a large frying pan, add onion and cook over medium heat for about 4 minutes or until lightly golden.
3-Add garlic and cook for one minute.
4-Add okra and cook, stirring for 8-10 minutes until soft.
5-Add tomatoes, kale, sugar, lemon juice, turmeric, cinnamon and za’atar. Simmer, stirring occasionally for 10 minutes or longer. Depending on how juicy your tomatoes are you may want to let it simmer longer in order to some of the juices to evaporate and flavours to settle.
6-Mix in the cilantro. Remove from heat and serve with a dollop of plain yogurt.
* Okra, Tomatoes, and Onions are the staples to this recipe but you may add as many or as few vegetables as you like. I often add eggplant, yellow tomatoes and red peppers. The possibilities are only limited to what is in your fridge
